KELA KE KEBAB

• 250 grams raw bananas, peeled and diced
• 1 black cardamom pod (badi elaichi)
• 1/4 cup kuttu ka atta (buckwheat flour)
• 2 teaspoons white rock salt (sendha namak)
• 2 teaspoons roasted coriander powder
• 1/2 teaspoon chili powder
• 2 teaspoons fresh lemon juice
• 1 green chili, finely chopped
• 2 tablespoons fresh coriander, chopped
• Desi ghee for pan-frying
• Extra kuttu ka atta for dusting
METHOD
1. Steam the diced bananas along with the ginger and black cardamom until the bananas are tender but still have a bit of bite.
2. Ensure to use minimal water during steaming to prevent any liquid from remaining after cooking. Allow the mixture to cool completely.
3. Once cool, mash the bananas and incorporate the kuttu ka atta, salt, roasted coriander powder, chili powder, lemon juice, green chili, and fresh coriander, mixing until a dough-like consistency forms.

• 10 g ginger, shredded
• 1/2 tsp cumin seeds
METHOD

METHOD
1. Begin by pouring the milk into a deep vessel, allowing its rich creaminess to envelop the pot. Break the makhanas into smaller pieces, releasing their nutty aroma, and add them to the milk.
