Glaced Start To 2023
As soon as January
arrives, everybody starts remembering the celebrations of Lohri, the kite
flying on Makar Sankranti, and the sweetness of Pongal. That's why once again
we have brought some amazing recipes for each festival just for you. So,
without wasting any time let's start cooking.
Sakkarai Pongal
Ingredients
1 cup Rice
1/4 cup Yellow Moong Dal
4 cups milk 1 cup Jaggery
3 tsp Cashews
3 tsp Raisins
1/4 tsp Cardamom Powder
1/4 cup Ghee
1/2 cup Coconut
Water as required
Method
1. First wash and soak the lentils and rice in two cups of water and keep it for 20 minutes.
2. After this, put the mixture of rice and lentils with water in the cooker and keep it on medium flame.
3. Remove the cooker from the flame after the 3 whistles. Keep the cooker aside.
4. Now heat 1 teaspoon of ghee in a small pan and add cashews and raisins to the hot ghee to fry them.
5. After this, heat another pan by adding jaggery, 2 spoons of ghee, and a cup of water.
6. Till the jaggery syrup is prepared, open the cooker and mash the rice and lentils well.
7. When the jaggery syrup comes to a boil, mix it well in a cooker with rice and lentil paste.
8. Keep the cooker on medium flame and cook for some time cook the paste and jaggery syrup on low flame till it’s good to go.
9. When the jaggery syrup is mixed into a fine paste, add fried cashew, and raisins and mix it nicely.
10. Remove the Sakkarai Pongal from the flame and take it out in a bowl. Garnish it with some fried cashews and raisins and serve it hot!
KESAR ELAICHI SHRIKHAND
Ingredients
3 cups Curd
1/2 cup (ground) Sugar
1 tsp Cardamom Powder
2 pinches Saffron
1 and 1/2 tbsp Milk
Dry fruits for garnish (cut them into long pieces)
Method
1. Take milk in a small bowl and soak saffron in this milk for half an hour.
2. To remove water from the curd, hang it by tying it to a cotton cloth.
3. Add sugar, cardamom powder, and milk along with saffron to the hung curd and mix well.
4. Garnish it with your choice of dry fruits and keep it in the fridge for a few hours.
5. Your Kesar Elaichi Shrikhand is ready to serve chilled with some cardamom powder and Kesar strands on top.
TIL PITHA
Ingredients
4 bowls Rice
1 bowl Jaggery
1 bowl Sesame
half a bowl of Desiccated Coconut
Water
Method
1. First of all, wash the rice thoroughly and soak it in water overnight.
2. The next day, take out the rice from the water and grind it well in the mixer to make powder keep it aside and prepare the ingredients for stuffing.
3. Roast black sesame seeds in a pan. When it turns light golden turn off the gas.
4. When the sesame seeds cool down, mash them with your hands and take out their peels.
5. Now take jaggery and crush it and mix sesame seeds and desiccated coconut in it and mix all three ingredients nicely.
6. In the end, put a tawa on the gas and take rice powder by hand, and spread it on the tawa in the shape of a roti.
7. Let it cook on low flame for a few seconds.
8. After this, take a little bit of the stuffing in your hand and spread it in the middle of this rice roti.
9. Now, with the help of a spoon, gently wrap that roti in the shape of a roll.
10. Prepare all pithas in the same way and serve everybody on this Magh Bihu 2023.
