MOONG DAL DOSA

INGREDIENTS:

1/2 cup Chilka or Dhuli moong dal

1/4 cup Rice

2 tbsp finely chopped coriander leaves

Salt as per taste

1/2 cumin powder

1-inch-long piece of ginger

1 green chili

Oil for roasting dosa

METHOD:

1. Soak the moong dal in water for 3-4 hours. Clean, wash, and soak the rice in a separate bowl for the same amount of time.

2. If the lentils are peeled, separate the peels by rubbing the lentils with your hands and remove the peels from the lentils in water. Drain the water from the dal and rice and grind it coarsely, adding ginger, green chilies, and water as needed.

3. Now, take out the mixture in a big bowl and add salt and green coriander to the mixture, and mix. The mixture should neither be too thin nor too thick, it should have the right consistency, just like preparing the batter for making dosa.

4. To make dosa, put a non-stick griddle on the gas, heat it lightly and spread a little oil on the griddle, take 1 to 1.5 spoons of batter from the mixture and spread it evenly on the griddle. Pour some oil around the dosa with a spoon. Let the dosa cook on high and medium flame till it turns golden brown from the bottom side.

5. Roast it to a nice golden brown from both sides. The dosa is completely fried and crispy too. Take off the dosa and keep it on a plate and slow down the gas to make another dosa, sprinkle water on the griddle, so that the griddle cools down a bit, now wipe it thoroughly with a paper napkin or a wet thick cloth, the griddle is overheated.

6. Serve hot moong dal dosa with green coriander chutney, tomato sauce, or peanut chutney.
