With the change in the season, there is should be a change in eating habits. Due to this, in the cold where we mostly eat such things, whose effect is hot and the body gets warmth from it. But in summer, on the contrary, eat things that have a cold effect. To keep the body healthy during the winter season, healthy things should be consumed. In such a situation, if you consume Gajak, then it gives a lot of benefits to your health. Gajak is full of nutrients as it is made by mixing jaggery and sesame. So, let’s know the different types of recipes for Gajak.

DRY FRUITS GAJAK

Ingredients:

1 cup white sesame seed

1-2 tbsp ghee

200 grams jaggery

100 grams of finely chopped dry fruits (almonds, pistachios, cashews)

50 grams peanuts

Method:

1. Place a pan on the gas burner and put sesame seeds in it. Fry them till they turn light brown. When they are roasted, spread them on a plate and let them cool.

2. Now, add cashews, pistachios, almonds, and peanuts to the same pan. Fry them on low flame, but make sure that they do not turn black.

3. After removing the roasted nuts from the flame, add ghee and jaggery to the pan and let it melt on low flame. Keep stirring it continuously so that the melted jaggery does not stick to the pan.

4. When the jaggery melts down, you can add roasted sesame seeds to it. Mix it well to avoid lumps. Then add roasted dry fruits to it and mix well. Keep the flame low. Let it cook for 1-2 minutes.

5. Grease a flat plate with a few drops of ghee and then pour the mixture and spread it evenly. When cool, cut into desired shapes and pieces. Now, your Dryfruits Gajak is ready to eat. 

PEANUT CHIKKI

Ingredients:

2 cups peanuts

2 cups desi jaggery

1 tbsp water

1 tsp ghee

Method:

1. To make Peanut Chikki, first take raw peanuts.

2. Secondly, keep a pan on low medium flame and roast the peanuts till they turn golden while stirring continuously.

3. After the peanuts turn golden, turn off the flame and take out the peanuts on a plate/cloth and let them cool.

4. Now, rub the groundnut with a cloth and remove its upper layer and separate it with the help of a sieve.

5. Mash all the peanuts lightly with your hands and break them into two parts.

6. Now, take two plastic sheets/of butter paper, grease them with ghee and keep them aside.

7. Take jaggery and melt it well with of water on a low flame, keep stirring it continuously.

8. After, the jaggery melts completely take 1 tbsp ghee in the pan and mix it well also, put all the peanuts in it and turn off the gas and mix the peanuts well in the melted jaggery.

9. Now, take out the entire mixture on a greased sheet and spread it even when it is hot, and cover it with another sheet from the above and roll it with the help of a roller pin.

10. Cut it into pieces only when it is hot and let it cool for 30 to 60 minutes lastly, your peanut chikki is ready to enjoy in winter.

TIL GAJAK

Ingredients:

1 bowl/200 grams of white sesame seeds

1 cup/450-gram jaggery

1 tbsp ghee

1 tsp cardamom powder

1 tbsp finely chopped pistachios and cashews for garnishing

Method:

1. To make Til Gajak, first, take white sesame seeds and put a pan on the gas, and fry the sesame seeds till it becomes golden and keep stirring continuously.

2. Switch off the gas after 2 minutes, take out the sesame seeds on a plate and let them cool.

3. Now, take a tray and grease it with ghee and keep it aside.

4. Take a grinding jar, put sesame seeds in it, and grind them to make a coarse powder. Add jaggery, and cardamom powder to the jar and mix well with sesame seeds.

5. Now, put a pan on the gas and add ghee to it after the ghee melts, add gajak mix to the pan, mix well and cook for 1-2 minutes.

6. Pour this mixture into a greased tray and spread it evenly and garnish it with chopped pistachios and cashews and keep it to set for 10 minutes.

7. After 10 minutes, cut it into the desired shape with a cookie cutter and serve it to everybody.
